Portion size: 6 oz of fish & ¾ cup of salsa

Ingredients
- 8 (6-ounce) mahimahi or other firm white fish fillets
- 3 diced peeled ripe mango (about 1 pound)
- 1 1/2 cup diced English cucumber (about 1 medium)
- 2/3 cup finely diced red bell pepper
- 4 tablespoons minced red onion
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon minced peeled fresh ginger
- 2 serrano chile, minced
- 1 1/2 teaspoon kosher salt, divided
- 1/4 teaspoon freshly ground black pepper
- Cooking spray
- Lime slices (optional)
Directions
- Season the fish with salt and pepper to taste.
- Saute fish a frying pan
- Mix other ingredients to make salsa. Add lots of lime to taste.
- Top fish with salsa and serve with rice or blue chips as desired.
