Ingredients

  • 8 (6-ounce) mahimahi or other firm white fish fillets
  • 3 diced peeled ripe mango (about 1 pound)
  • 1 1/2 cup diced English cucumber (about 1 medium)
  • 2/3 cup finely diced red bell pepper
  • 4 tablespoons minced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon minced peeled fresh ginger
  • 2 serrano chile, minced
  • 1 1/2 teaspoon kosher salt, divided
  • 1/4 teaspoon freshly ground black pepper
  • Cooking spray
  • Lime slices (optional)

Directions

  1. Season the fish with salt and pepper to taste.
  2. Saute fish a frying pan
  3. Mix other ingredients to make salsa. Add lots of lime to taste.
  4. Top fish with salsa and serve with rice or blue chips as desired.
