And I wanted to share it with you all in the hopes that it brings some joy to someone's life.<br> <br> <strong>Description of the dish:</strong> Hearty, delicious, creamy and tasty soup that takes no work and is so satisfying as a meal.</p> <p>This recipe makes 8 servings.<br> <br> <strong>Time to prep:</strong> 15 minutes<br> <br> <strong>Time to cook:</strong> 4-6 hours in the slow cooker</p> <p><strong>Ingredients:</strong></p> <ul> <li>1 medium yellow onion, diced</li> <li>1/3 cup all-purpose flour</li> <li>1 Tbsp dried basil</li> <li>2 cloves of garlic, minced</li> <li>2 Tbsp tomato paste</li> <li>3 Tbsp olive oil</li> <li>4 cups chicken broth</li> <li>2 (14.5 oz) cans petite diced tomatoes</li> <li>1 to 1 1/2 lbs boneless, skinless chicken thighs</li> <li>1 tsp salt</li> <li>1/2 tsp pepper</li> <li>4 cups frozen cheese tortellini (or you can use fresh)</li> <li>3 cups packed spinach (you can definitely add more than this if you want)</li> <li>1/2 cup Parmesan cheese</li> <li>1 cup heavy cream or 1 cup half and half</li> </ul> <p><strong>Cooking Instructions:</strong></p> <ol> <li>In a microwave-safe bowl add the onions, flour, basil, garlic, tomato paste and drizzle with olive oil.</li> <li>Microwave for 5 minutes, stirring every 90 seconds or so. (The mixture will be pasty and look weird but don’t worry it will all be okay in the end). Add the mixture to the slow cooker*.</li> <li>Add broth, tomatoes, chicken, salt and pepper to the slow cooker. Stir.</li> <li>Cover and cook on LOW for 4-6 hours or on HIGH for 3-4 hours (or until chicken is very tender).</li> <li>Remove the lid use a fork to remove the chicken out of the slow cooker. And add in tortellini and spinach, Parmesan cheese and warmed cream (cream should be warmed because it may cause curdling if added in cold).</li> <li>On a cutting board, shred or cut the chicken into bite-size pieces. Add the chicken back into the slow cooker. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.</li> <li>While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.</li> <li>Preheat broiler to high. Fill a small flameproof rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Get any lumps out now, since you won't have time to do so once you add these to the wet ingredients in step 4.</li> <li>In a large bowl, combine apple sauce, oil, non-dairy milk, water, and vanilla.</li> <li>Add the dry ingredients to the wet ingredients, folding in until JUST combined. I'm serious. Over-mixing will lead to a dense and tough cake.</li> <li>Pour into parchment-lined 9"x9" baking dish.</li> <li>Bake at 400 ÌŠF for 20 minutes. The top should just start to split and a toothpick inserted into the cake should come out almost clean.</li> <li>After 10 minutes of rest in the pan, move the cake from the baking dish to a cooling rack to finish cooling. Brown beef and sausage with about five cracks of salt and pepper, each. Set aside.</li> <li>In the remaining grease, sauté onion and peppers with about five cracks of salt and pepper for 6-8 minutes. Add garlic and continue to sauté for another 1-2 minutes. Pull vegetables and set aside with the meat.</li> <li>Add a bit more butter to the Dutch oven. Once it has melted, add the tomato paste and cook it until it browns – keep stirring so it doesn’t burn. Use beer and beef stock to deglaze the pan.</li> <li>Add the meat, onion/pepper/garlic mixture, tomatoes, beans, corn, chili powder, smoked paprika, and oregano to the Dutch oven and bring to a boil. Mix well, decrease heat to maintain a simmer, and cover for about two hours. Her bread was smooth and moist.</p> <p>Makes two loaves.</p> <p><strong>Time to prep:&nbsp; </strong>30 minutes<br> <br> <strong>Time to cook:</strong> About 1 hour 15 minutes at Boulder's altitude</p> <p><strong>Ingredients: </strong></p> <ul> <li>2 cups sugar</li> <li>2/3 cup applesauce (or olive oil)</li> <li>4 eggs</li> <li>1 large can pumpkin (29 oz.)</li> <li>3 1/3 cups flour</li> <li>1/2 tsp baking powder</li> <li>2 tsp baking soda</li> <li>1.5 tsp cinnamon</li> <li>1/2 tsp salt</li> <li>1/2 cup water</li> <li>Optional: 1 cup chopped total of walnuts, crushed almonds, raisins or Craisins</li> </ul> <p><strong>Cooking Instructions:</strong></p> <ol> <li>Pre-heat oven to 350 degrees Fahrenheit.</li> <li>Beat sugar and applesauce (or oil) together.</li> <li>Beat in eggs, 1 at a time.</li> <li>Stir in pumpkin.</li> <li>Sift together flour, baking powder, cinnamon and salt.</li> <li>Add alternately with water to batter.</li> <li>Optional: stir in nuts and/or raisins/Craisins.</li> <li>Spoon batter into buttered and floured bread loaf pans.</li> <li>Bake in 350 degree oven. At 5,000 feet above sea level, bake 70 minutes check with a knife.
